Whole 30 Diet Success? Yes,...if you have recipes like this one!

Success with the Whole 30 eating lifestyle has so much to do with our mindset! For it to work, it can't be 30 days of sacrifice and resentment! Food is such an important part of our culture. Eating is a very social thing to do (which can get us into trouble). We need to learn to associate happiness, friendship, laughter and fun with healthy food choices and not just cheesecake!





Having delicious, beautiful, colorful and flavorful meals planned will help us "turn that frown upside down and smile that frown away!" Most people start an eating plan focusing on all of the things that they can't eat. Hopefully as we share a few recipes, you can focus instead on all of the amazing things that you CAN eat!


One Pan Steak Bites with Sweet Potatoes & Curry Aioli

You may be tempted to skip the Curry Aioli, but it really brings the flavors together in this dish! Try serving it on the side and dipping each bite.




Who doesn't love one skillet meals?


Life is busy! Doing dishes is not fun and takes time. Simplify your life with this fun one skillet meal! Just a note.... We are always trying to remove toxins from our life. The problems with Teflon and other "non-stick" cookware is the chemicals that leech into your food when you use them. We recommend using your favorite cast iron or other non toxic cookware for this and all of the recipes that we share.


Recipe (4 servings - Approx 615 Calories - Gluten Free

Today's recipe comes from "The Modern Proper". They have lot's of great recipes to try! For this meal, you will need:


Ingredients

  • 2 lbs Sirloin steaks, cut into 2-inch pieces

  • 4 Tbls Olive oil, divided

  • 1 1/2 lbs Sweet potatoes, peeled and cut into 1-inch cubes

  • 5 Cloves garlic, minced

  • 2 tsp Salt

  • Cracked pepper

  • 3-4 leaves of Fresh Basil, chopped for garnish

Curry Aioli

  • 3/4 cup Good quality whole 30 approved mayonnaise

  • 1 Clove garlic minced

  • 1 tsp Curry powder




Directions:


  1. In a small bowl mix together mayonnaise, garlic and curry powder until smooth and set aside.

  2. Heat 2 tablespoons olive oil in a large cast iron skillet over medium-high heat. Add the sweet potatoes to the pan in single layer. Let sit untouched for 3-5 minutes until golden brown. Toss in the pan for an additional 10-12 minutes until fork tender. Remove from pan and set aside.

  3. Season steak pieces generously with salt and pepper.

  4. Heat 2 Tbsp. of olive oil over high heat. Add in steak bites in a single layer, making sure they aren’t touching each other. Cook on high untouched until steak bites are well browned, turn sides and repeat. Continue cooking until all sides are brown. If working in batches, remove the first batch from the pan and cook the remaining steak.

  5. Once all the steak is cooked add both sweet potatoes and all steak back into the pan along with the garlic and cook for 1-2 minutes until garlic is fragrant.

  6. Garnish with chopped basil.

  7. Serve hot with curry aioli on the side.


Tips:


1- Be sure that your sweet potatoes are cut into no larger than 1 inch cubes or they will be charred on the outside and hard on the inside. You can also add 1/4 cup of water and cover pan with a lid for the last 3-4 minutes to soften. You want them firm enough to stay together but soft enough that they don't crunch in your mouth.

2- Your family will love this! You may want to double or triple the recipe!

3- Don't omit the curry aioli. It really sets the flavors off!

4- Season the steak with salt and pepper prior to cooking and let your meat rest at room temperature for an hour prior to cooking. If you're using a less tender cut of meat, you can also marinate it overnight prior to cooking. My family also loves a little bit of Tony Chachere's creole seasoning to kick it up just a notch!
