Turmeric & Smoked Paprika Deviled Eggs

While this recipe doesn't use enough turmeric to improve your health, we know that lots of little things add up to big results! This recipe is simple, delicious, protein packed and whole-30 compliant!

“Cook your boiled eggs in your Instapot! It's fast and the shells peel right off! .”

For perfect hard boiled eggs in your instapot, use the rack your pressure cooker came with and carefully place eggs in the pot. Don't use eggs that have hairline cracks. They won't survive! I cook up to 18 eggs at once in mine!

Add 1 cup of cold water. Close and seal lid and cook on MANUAL for 5 minutes (6 if you want a very firm egg, but 5 works better for this recipe). It will take 5-10 minutes for your pot to come to pressure. When your 5 minute cook time is finished, let the eggs sit in the pressurized pot for another 5 minutes and THEN release any remaining steam. Carefully place the eggs in a bowl of ice water for another 5 minutes. The eggs will practically peel themselves!


Recipe


Ingredients

  • 6 large eggs

  • 3 tablespoons mayonnaise (See the whole-30 compliant homemade mayo recipe on our blog!)

  • 1 tablespoon minced fresh parsley, plus more for garnish

  • 1-2 tablespoons lemon juice (about 1/2 lemon)

  • 1 teaspoon Dijon mustard

  • 1/2 teaspoon turmeric

  • 1/2 teaspoon smoked paprika

  • pinch of cayenne pepper or try chipotle pepper!

  • Optional: 1 drop of doTERRA black pepper essential oil


Instructions

  1. Slice each egg lengthwise, and gently scoop the yolks to a small bowl.

  2. Mash yolks with a fork. Add remaining ingredients and mix until well incorporated.

  3. Put mixture back into egg halves. Use a pastry bag or spoon mixture into a quart size freezer bag and cut off one bottom corner with scissors. Use the bag like you would a pastry bag.

  4. Garnish with parsley and just a sprinkle of Turmeric.

  5. Chill and Serve
